Prasopita is a delicious traditional Greek pie made using sweet leeks, plenty of herbs and feta cheese. Artemis uses a technique where the Fillo Pastry is crinkled and spiralled to form an impressive and delicious pita. Artemis has been cooking with our Fillo Pastry for over 50 years. Growing up in the Epirus region of Greece, which is renowned for its pites, or pies, Artemis has become famous for the exceptional variety of pites she makes. Today, she shares her recipe for one of her favourite vegetarian pittes, Prasopita.

Trigona are a traditional Greek dessert which originate from Thessaloniki in Greece. They get their name ‘trigona’ which means ‘triangles’ in Greek, from their triangular shape. Layers of Fillo Pastry are folded into a triangle shape and baked until golden and crispy. Once cooled, they are coated in syrup and piped with a delicious custard cream filling.
