Kristian's Za'atar Fillo Bites with Spiced Lamb and Labneh

Kristian’s Middle Eastern inspired Za’atar Fillo Bites are made using a crinkled Fillo Pastry base generously lathered with olive oil and za’atar. They’re topped with a spiced lamb mince, creamy labneh (which Kristian loves to make fresh), pomegranate and mint. They’re a great appetiser, with the perfect combination of flavours and textures.

Andrea’s family regularly gathers to cook and eat together, whether it’s for a special family celebration or just to enjoy each other’s company for the day. What a joy it was to spend the day with three generations of the family as they prepared a variation of Kolokithopites. Kolokotes, or Kolokopites are Cypriot pumpkin pies traditionally made with a thick style pastry in a semi-circle shape. Today, Andrea’s family are making them with our family’s Fillo Pastry in a spiral shape, using fresh pumpkin from Pappou Savva’s garden. Watch along to see how they make them.

Tiropita is a traditional Greek pie made with cheese and Fillo Pastry. This delicious savoury cheese pie is a wonderful lunch or dinner pie recipe. We’ve used a combination of four cheeses for extra flavour. We finish the pie off with soda water for an extra moist pie and extra crispy Fillo Pastry pie top.
