Dezi's Bougatsa Parcels

Filo Pastry recipe traditional greek bougatsa

These Bougatsa parcels are one of Dezi’s favourite Greek desserts - perfect to enjoy as a dessert or for a traditional Greek breakfast option. Crispy golden Fillo Pastry is filled with a creamy egg-free semolina custard and dusted with icing sugar and cinnamon.

Ingredients

Serves 5-6

375g Antoniou Fillo Pastry
1 litre milk
3/4 cup caster sugar
1 cup fine semolina 
1 x packet of vanilla sugar
Pinch of nutmeg  
1/4 cup cream 
250 grams of unsalted butter 
Icing sugar and cinnamon, for dusting

Filo Pastry recipe traditional Greek bougatsa

Method  

Before you begin this Fillo Pastry recipe, take your Fillo Pastry out of the fridge to bring it up to room temperature.

Preheat the oven to 180 degrees Celsius. Line a baking tray with baking paper.

For the custard
In a saucepan on medium heat mix the milk and sugar, untill the sugar has dissolved. Add the fine semolina, vanilla sugar and nutmeg. Using a whisk, keep whisking until it thickens. Take off the stove and set aside.

Melt your butter. Remove the Fillo Pastry from its packaging, lay it flat on your bench and cover with a tea towel.

Whisk the cream through the semolina custard filling.

Assembling the parcels
Butter 3 sheets of Filo Pastry and fold the bottom half up, approximately two inches, to create a thicker layered section. 

Add 4 heaped tablespoons of custard filling onto this folded section. Fold the sides into the centre, and roll like a log.

Transfer to the prepared baking tray. Brush the top of the parcel with butter. Repeat with remaining parcels until you have used all the Pastry and custard (approximately 6 parcels). Bake in the oven for 30 minutes or until golden.

Remove from the oven and dust with icing sugar and cinnamon. Serve immediately.
