Apple Pies in Cinnamon Sugar

Ingredients

Makes 36-40 triangles

For the Fillo Pastry
375g Antoniou Fillo Pastry
300g unsalted butter, melted

For the apple pie filling
25g unsalted butter
3 large apples, peeled, cored & chopped into ½ cm pieces (we used Pink Lady apples)
2 tablespoons brown sugar
1 teaspoon cinnamon
1 teaspoon cornflour (if required)
1 teaspoon water

For the cinnamon sugar
1 cup white sugar
1 teaspoon cinnamon

Method  

Before you begin this Fillo Pastry recipe, take your Filo Pastry out of the fridge to bring it up to room temperature in its packaging. Preheat your oven to 180 degrees Celsius fan forced. Grease a large baking tray with butter.

To make the apple pie filling
Place the butter and apples in a saucepan over medium heat, stir until the butter melts. Add the sugar and cinnamon and mix until combined. Cover with a lid and cook for 10 minutes, stirring occasionally. If there is a lot of liquid, dilute the cornflour into the water and add to the mixture. Stir until combined. Remove from the heat and allow to cool.

To make the cinnamon sugar
Combine the sugar and cinnamon in a bowl large enough to dip a triangle into. Mix until well combined.

To assemble the apple pies
Place your stack of Fillo Pastry on your workspace with the short side of the Fillo Pastry facing you. Using a sharp knife, cut the Pastry into 4 even strips, along the long side of the Pastry.

For each apple pie, you will use two strips of the Pastry. Drizzle butter over the Pastry. Place a little bit less than one tablespoon of apple pie filling at the bottom of each strip. Take the bottom left corner of the Pastry and fold it up and over the apple pie filling to the right of the pastry, forming an equilateral triangle (a triangle that is even on all edges). Continue folding it right to left, ensuring the filling is tucked in and the corners are well enclosed (this will prevent the filling escaping while they bake). Place on the baking tray and brush with melted butter. Repeat with remaining pastry and filling. Allow some space between the triangles as they will expand slightly when baking.

Bake for 25-30 minutes or until golden and crispy all over.

Remove them from the oven, allow to cool slightly then lightly brush each side with some melted butter. Dip them into the cinnamon sugar mixture until they are well coated on both sides.
