Lemon meringue tarts or lemon meringue pie would have to be one of the world’s most loved desserts. There is something quite wonderful about the bursting citrus flavour of a homemade lemon curd, together with the fluffy texture sensation of meringue.
Our family makes lemon meringue tarts using Fillo Pastry for the tart bases. They are quick and easy to make and store well in an air tight container. They can be made ahead of time and filled just before eating them.
