Always use the freshest spinach and herbs you can find.

Spinach can release a fair bit of liquid during the cooking process. So the best thing to do is sprinkle your chopped spinach with some salt, allow it to sit for 10 minutes and then using your hands, squeeze the excess liquid out.

Add rice to your filling. This will help absorb any excess moisture during the cooking process.

Always be generous with the amount of oil or butter you use when brushing your Fillo Pastry. This will ensure your Fillo Pastry is super crispy.
