This delicious sweet Filo Pastry dessert has taken the world by storm after going viral on Tiktok. It goes by the names ‘Tiktok Fillo Crinkle Cake’, ‘Filo Crinkle Cake’, ‘Fillo Pastry Crinkle Cake’ and ‘Phyllo Crinkle Cake’. it is an easy to make Fillo Pastry dessert using a condensed milk custard. The Soufra (or concertina) Fillo Pastry folding technique is commonly used in traditional Greek desserts.
Our family’s top tips for making the Fillo Crinkle Cake
We’ve called in our Fillo Pastry expert, Yiayia Marina Antoniou, with her 65 years of experience, to put together her top tips for making the Fillo Crinkle Cake, so here goes:
1. Bring your Fillo Pastry up to room temperature, still in its plastic packaging before you begin making the cake. That’s at least 2 hours for chilled Fillo Pastry and 4 hours for frozen Fillo Pastry. This will ensure that your Pastry is soft and pliable, and make it much easier to crinkle.
2. Brush your sheets of Fillo Pastry with butter before you crinkle the Pastry. The Tiktok videos show people baking the Pastry and then pouring the butter over it. Try it Yiayia’s way and brush the butter straight onto the Pastry first – we guarantee it will result in much crispier Fillo Pastry.
3. Fold the Fillo Pastry with the shortest side of the Pastry facing you, not the longest – it’s much easier to fold and transfer to your baking tray.
4. Fold the Pastry on a flat bench – we’ve seen so many people folding the Pastry up in the air – why make life so difficult?
5. Once baked, make sure you don’t cover the cake with cling film or foil until it has completely cooled, at least 4 hours. This will ensure that condensation doesn’t form and drip onto the cake resulting in soggy Pastry. Keep it crispy by covering leftovers only once the cake has cooled.
