How to fold Fillo Pastry triangles

  1. Lay one sheet of FIlo Pastry on the bench with the shorter edge facing you & brush with butter or oil.

  2. Lay another sheet on top and brush with butter or oil, then proceed to cut the sheet into 3 strips (each should measure approximately 15cm).

  3. Place one heaped tablespoon of the filling mixture on the very top of the sheet allowing a 2cm from the bottom.

  4. Take the bottom right corner of the Filo Pastry strip and fold it diagonally towards the opposite side of the strip to form a triangle.

  5. Then take the bottom left corner of the strip and fold diagonally towards the opposite side.

  6. Continue folding in the same way to ensure you keep a triangular shape.

  7. Any excess Filo Pastry that remains at the end of the strip can be “tucked in” by brushing it with a little water and sealing the triangle.

  8. Brush each triangle with butter or oil and bake in the oven for 18-20 mins or until golden.
